As I mentioned yesterday, I have a new hero in Michelle Tam. I made her Cracklin' Chicken and It. Was. Awesome. Let's face it. I'm like a little kid. I love fried foods, anything salty and crunchy. I also love sweets - but not really candy. I love ice cream. I love creme brulee. I love rich sweets. And Smarties. I'm a big fan of smarties. In perusing the Google results of my Whole30 recipe search, I came across Michelle Tam's blog, Nom Nom Paleo. She has a video on that page I linked that shows just how freaking easy it is to make this chicken. And it is amazing. I can't say it enough.
One of the things I realized last night, is that I AM eating better. I may not be eating enough (although I don't feel hungry) and I may not be eating enough "good for you" stuff (I really need to increase my veggie intake) I am not eating any "bad for you" stuff. Like, NONE. No tater chips, no Doritos, no popcorn. No bread and butter. No quesadillas filled with delicious cheese. No pasta loaded with cheese. No peanut butter. No Candy. No sugar. No beans. No soy. Do you KNOW how many things have soy product in them??? It's kind of crazy to really read the labels as I go through the grocery store. You should try it.
It's interesting to be 10 days in. I'm still waiting for that "I want to rip your arms off" feeling. I am not there. I've been told I am incredibly optimistic. I guess I am. My sugar headache is subsiding. I'd say before I hit 14 days, I might actually have no headache at all. Here's hoping.
